A few years ago, I treated myself to a set of these Le Creuset mini cocottes. I went through a little French onion soup phase, extra gruyere of course.
Coming back from Sweden, I wanted to give Mama a little taste of Scandinavian cuisine. Namely, I've been obsessed with a cheese named västerbotten, and they make pies with this delicious cheese: västerbotten paj. Incredible. So, I wanted to recreate that at home (complete with all the fixings), but I didn't want to deal with the dough and the crust. Let's cut to the chase: eggs, heavy cream, västerbotten cheese, et mes petites cocottes.
They're so cute. I love their proportions, and the glaze colors are so fun. There's even a little bit of a gradient from bottom to top, so it's darker in some areas. Makes me want to make some. Maybe I'll go miniature for the next term.
